Science is my passion. Among the many features of modern science, I most appreciate the interdisciplinarity of fields and the ability to combine multiple disciplines to better understand a single issue. I am a biotechnologist and food technologist. I study the possibility of synthesizing and using microbial oil in food technology and the application of microbially derived enzymes in biocatalysis (and green chemistry in the broadest sense).
I am particularly interested in the physiology of yeast of the species Yarrowia lipolytica. I am looking for biotechnological methods of industrial waste disposal following the idea of sustainable development. Part of my scientific experience concerns the biotechnological use of lactic fermentation bacteria of the genus Lactobacillus. Outside of academia, I volunteer at a non-governmental organization where I educate staff. I enjoy traveling in Poland, camping, hiking in the mountains, a good book, arts and poetry. I have recently owned my own garden, which allows me to gain distance from my daily responsibilities.
